Kali's Eggs


6 hard-boiled eggs
1 tbsp butter
1 tsp curry powder
1 clove garlic, crushed
1 spring onion, including the crisp part of the green shoot, finely chopped
¼ tsp Tabasco
⅓ cup mayo
½ tsp salt


1. Slice the eggs in half and carefully remove the yolks into a mixing bowl. 

2. In a small, heavy frying pan over low heat, melt the butter. Add the curry powder and garlic and stir for 2 minutes.

3. Scrape the butter mixture into the yolks. Stir in the spring onion, Tabasco, mayo and salt and mix until creamy.

4. Spoon the mixture back into the hollows in the egg whites.

Yield:- 12 halves, each with 1 gram of carbohydrate, a trace of fibre and 3 grams of protein.
