Ricotta and Blueberry Pancakes

cup egg substitute
3 tbsp all-purpose flour
2 ounces fresh blueberries
cup ricotta cheese
1 tsp baking powder
2 tsp splenda granular


Serves: 2


1. Combine flour, baking powder and splenda in a bowl.

2. Stir in ricotta and egg substitute and mix to combine them well.

3. Fold in blueberries.

4. Onto hot griddle pour about ¼ of the prepared batter.

5. Cook until bubbly on top, on both sides.

6. Serve as desired.
