Basic - Mushroom Sauce

1.8 oz (50 g) dried mushrooms
2 tbsp butter
2 tbsp flour
2 tbsp sour cream
Salt and pepper


1.   In advance, soak the dried mushrooms in cold water for about 2 hours, then cook them in the same water, along with the onion and salt, until they turn soft. Drain, retaining the broth. Cut the mushroom and onion into thin slices.

2.   Make a roux by lightly frying the flour in butter until the flour has some colour. Add in sour cream along with the mushroom broth, sliced mushrooms, and onion and mix well. Salt and pepper and fry until it starts bubbling. 

Serve this sauce with meats, pierogies, with groats, dumplings or pasta.
