Okra In Oil

˝ kilo of okra
2 medium-sized onions
3 ripe tomatoes
˝ cup of oil


Serves: 4


Wash the okra well. Remove the stems with a sharp knife. Put 1 soupspoonful of salt and 3 spoonfuls of vinegar on a plate and dip each okra head in this, then put them in­to a pan.

Clean the onions and cut them into fine slices and add them to the okra, along with the skinned and crushed tomatoes and the oil, the salt and pepper. Add to this 2 cups of water and allow to cook slowly. Ensure that the okra does not overcook and go mushy.
