Mimosa Tip Spicy Salad

2 cups mimosa tips
cup cooked minced chicken breast
5 boiled prawns, cut into pieces
1 tbsp sliced hot chili
3 tbsp crisp-fried sliced shallot
3 tbsp roasted peanuts


1 tbsp roasted chili paste
tsp salt
2 tbsp palm sugar
2 tbsp fish sauce
cup tamarind juice


Mix the palm sugar, fish sauce, salt and tamarind juice together. Simmer over low heat until ½ cup of the liquid remains; stir in the roasted chili paste. Remove from the heat and leave to cool.

Wash the mimosa tips well, soak in cold water and drain. Transfer to a serving dish, keep in a refrigerator for a few minutes until cool. Place in a mixing bowl, add the prawns, chicken and spicy dressing; toss together well.

Spoon onto a serving dish, sprinkle with fried shallot, roasted peanuts and hot chili. Serve with pepper (wild) leaves, coral tree leaves and fried dried hot chilies.
