Scrambled Eggs with Smoked Salmon

What a delightful way to start the morning! Not only is this egg creation delicious but its sunny appearance is very visually appeal¬ing. The recipe can easily be doubled.

Ingredients

2 tablespoons extra virgin olive oil
1 tablespoon butter
½ cup chopped yellow onion
8 eggs
3 tablespoons
2 percent milk
3 tablespoons chopped fresh chives
¼ teaspoon coarse salt
¼ teaspoon freshly ground pepper
6 ounces smoked salmon (lox), cut into thin strips
1 tablespoon chopped fresh chives (optional)

Method

Heat the olive oil and butter in a large nonstick skillet over medium heat until the butter melts. Add the onion and sauté for 10 to 15 minutes or until golden.


Combine the eggs, milk, chives, salt, and pepper in a medium bowl and whisk until well blended. Pour the egg mixture into the skillet and cook for 4 minutes or until the eggs have almost set, stirring oc­casionally. Add the salmon and cook for about 1 minute or until the eggs are cooked but still moist.


To serve, divide the scrambled eggs on each of four dinner plates. Garnish each serving with chives, if desired.
