Sweet Potato Fritters


1 (8-ounce/230-g) sweet potato, peeled and shredded
1 carrot, shredded
1 tablespoon minced onion
2 eggs or cup (120 ml) egg substitute
cup (35 g) all-purpose flour
3 tablespoons orange juice
1 tablespoon grated orange zest
2 tablespoons chopped fresh parsley
1 to 2 tablespoons canola oil


Makes: 10


In a medium bowl, thoroughly combine all ingredients except oil. In a large nonstick skillet, heat 1 tablespoon oil. For each fritter, carefully spoon about 2 tablespoons sweet potato mixture into pan. Press lightly to form fritters. When edges begin to brown, turn and lightly press again; cook other side. Place on paper towels, cover to keep warm, and continue to cook fritters, adding more oil as needed.
