Tapenade is a Mediterranean olive spread that has become very popular in recent years. It makes a wonderful spread to serve with low-carbohydrate crackers or vegetables, or for a savory treat, it can be spread under the skin of chicken before it is baked.


1 clove garlic
5 anchovies, drained
1 cup Kalamata olives, pitted and drained
2 tablespoons extra virgin olive oil
˝ cup capers, rinsed and drained
1 teaspoon fresh lemon juice


Serves: 8


Place the garlic in the work bowl of a food processor fitted with a metal blade (or in a blender) and process until finely chopped. Add the rest of the ingredients and process until the mixture forms a paste. Transfer the tapenade to a covered dish and refrigerate until needed.
