Potato Soup With Cheese

Ingredients

½ kg (1lb 2oz) potatoes
2 onions
1 clove garlic
4 leeks
15-25g (½-1oz) butter
Salt, pepper
Turmeric, nutmeg
1½-2 litres (2½-3½pt) clear meat stock
250ml (9fl oz) cream
About 200g (7oz) cheese (Swiss or Cheddar)

Method

1. Clean and slice vegetables. Crush or finely chop garlic. Steam both in butter on low heat for 6-8 minutes. Add salt, pepper, ¼-½ x 5ml tsp (¼-½tsp) turmeric and meat stock.


2. Boil, covered, until vegetables are tender, then remove half of them with a slotted spoon. Allow remain­der to boil until quite soft and rub through a fine sieve or purée in a blender.


3. Place vegetables back into soup, bring to the boil and stir in warm cream, about 100g (¼lb) grated cheese and a little grated nutmeg. Stir until cheese has melted, but do not allow soup to boil. Serve hot with a couple of slices of cheese.
