Spinach Quiche

A classic brunch dish, excellent whether served hot or at room temperature.


1 (10-ounce/280-g) package frozen spinach
1 cup (230 g) plain nonfat yogurt
1 cup (230 g) nonfat cottage cheese
1 cup (250 ml) egg substitute
cup (30 g) shredded low-sodium Parmesan cheese
cup (30 g) crumbled feta cheese
1 tablespoon chopped sun-dried tomatoes
1 green onion, chopped
teaspoon dried leaf oregano
teaspoon ground nutmeg


Serves: 6


Preheat oven to 350°F (175°C). Thaw spinach and place in a sieve. Squeeze excess water out of leaves before using. Place all ingredients in a food processor and blend. Pour mixture into 9-inch (23-cm) pie pan and bake 45 minutes. Serve hot or cold.
