Vietnamese Pork Sausage Spicy Salad

2 cups Vietnamese pork sausage, cut into bite-size pieces
1 onion, cut into wedges
1 celery, cut into short lengths
2 leaves Chinese cabbage, cut into pieces


10 hot chilies
1 tsp sugar
2 tbsp fish sauce
2 tbsp lime juice


Pound the chilies together coarsely in a motar then transfer to a sauce dish. Stir in sugar, fish sauce and lime juice and mixing well.

Bring the water to a boil over medium heat, blanch the pork sausage for a few minutes, remove and drain. Transfer the sausage to a mixing bowl, toss well with the spicy dressing and onion. Add celery and toss lightly.

Spoon onto a serving dish; garnish with chili strips and serve with fresh Chinese cabbage and celery.
