Hummingbird Cake


3 cups flour
2 cups sugar
1 teaspoon soda
1 teaspoon salt
1 teaspoon cinnamon
3 eggs
1 cup oil
1 teaspoon vanilla
2 cups chopped bananas
1 8oz can crushed pineapple, undrained
1 cup Black Walnuts


˝ cup oleo, softened
1 x 8oz pkg cream cheese, softened
1 teaspoon vanilla
2 cups confectioner’s sugar


Combine flour, sugar, soda, salt and cinnamon in large mixing bowl. Add eggs and oil. Stir in vanilla, pineapple, bananas and Black Walnuts. Spoon batter into 3 x 9-inch round greased cake pans. Bake at 350 degrees F for 25-30 minutes. Cool.

Frosting: Combine ingredients and spread between layers, on top and sides of cake. Sprinkle with additional Black Walnuts if desired.
