Vegetable Pasta Salad

225g/8oz pasta bows
850ml/1 pints/3 cups boiling water
1 x 210g/7oz can tuna
90g/3oz/ ⅔ cup sweetcorn kernels
90g/3oz/ ⅔ cup cooked, sliced green beans
4 spring/green onions, cut diagonally into inch lengths
30ml/2 tablespoons grated horseradish
15ml/1 tablespoon lemon juice
60ml/4 tablespoons mayonnaise
Freshly ground black pepper
15ml/1 tablespoon chopped mint
15ml/1 tablespoon chopped parsley


Serves: 4


Put the pasta in a large bowl with the water. Cover and cook on HIGH for 8-10 minutes until tender. Drain and rinse with cold water, drain again and set aside.

Break the tuna into large chunks, add the sweetcorn, green beans and onions, and mix well. Mix the horseradish with the lemon juice, mayonnaise and seasoning. Add to the pasta and toss to coat. Serve the pasta cold, sprinkled with the chopped mint and parsley.
