Gajar Ka Halwa

Carrots, washed, peeled, shredded 1 kg
Almonds, sliced or slivered 30 gms /2 tbs
Milk 600 ml /2 cups
Raisins 40 gms /2 tbs
Sugar 110 gms / cup
Walnuts, chopped 40 gms /2 tbs
Brown sugar 85 gms / cup
Cloves (laung), ground 1 gms / tsp
Green cardamoms (choti elaichi), 5gms/ 1 tsp
Ground Nutmeg (jaiphal), 1 gms / tsp
Cinnamon (daalchini), ground 1 gms / tsp
Butter/Oil 80 ml/⅓cup

Combine carrots and milk in a pan, bring to a boil, reduce to moderate heat, cook for 20- 25 minutes, stirring continuously, till the mixture is nearly dry.

Add white sugar, brown sugar and half of the cardamom, continue stirring. Cook for 10-12 minutes. Remove pan from heat and set aside.

Heat oil in a pan over moderate heat, fry almonds until golden. Stir in the carrot mixture along with raisins, walnuts and ground spices. Cook till the mixture (halwa) begins to separate from the sides. Serve hot, garnished with remaining cardamoms.
