Pork With Spiced Apricot Sauce

30ml/2 tablespoons oil
1 small onion, peeled and chopped
1 small clove garlic, peeled and crushed
120g/4oz/1 cup ready-to-eat dried apricots, chopped
30ml/2 tablespoons sherry
140ml/ pint/ cup water
2.5ml/ teaspoon five spice powder
4 boneless pork loin chops


Serves: 4


Put 15ml/1 tablespoon of the oil in a small bowl and add the onion and garlic. Cover and cook on HIGH for 6-8 minutes to soften. Add the apricots, sherry, water and five spice powder. Cover and cook on HIGH until soft and pulpy. Set aside and keep warm.

Heat a browning dish for the manufacturer's recommended time, add the remaining oil and quickly press the chops down onto the surface of the dish, then turn over and press down again. Cook on HIGH for 5-10 minutes until the chops are cooked. The apricot sauce can be thinned with a little of the juice from the chops if desired. Serve the chops with the apricot sauce.
