Frozen Oranges

A tasty and attractive sorbet that is served in orange 'shells'

TIME: Preparation takes about 30 minutes and freezing takes 5-6 hours.

About 6 oranges to make 280ml / 10 fl oz orange juice
140ml / pint water
150g / 5oz sugar


Serves: 4


1. Cut the tops off the oranges and remove the pulp with the help of a small spoon, keeping the orange skins whole.

2. Squeeze the juice from the pulp and measure it until you have 280ml / 10 fl oz of freshly squeezed juice, you may require more oranges for this.

3. Mix the orange juice, together with the water and sugar. Mix well with a whisk and then pour into a shallow container and freeze for 2 hours, or until just beginning to set.

4. Break up the partially frozen ice using a fork or electric whisk, then return to the container and continue to freeze for another hour.

5. Break up the ice crystals again, mashing well. Pour into the container and freeze until solid.

6. Before serving, remove the mixture from the freezer and allow to soften slightly in the refrigerator. Spoon into the orange 'shells' and serve.

COOK'S TIP:- When you have removed the pulp from the oranges, place the skins in the freezer, so that they are very cold when you fill them with the sorbet.
