Strawberry, Banana and Coconut Smoothie

200g/7oz/1 cups strawberries, plus extra, sliced, to decorate
2 ripe bananas
115g/4oz creamed coconut (coconut cream)
120ml/4fl oz/ cup water
175ml/6fl oz/ cup skimmed (skim) milk
30ml/2 tbsp lemon juice
10 ice cubes


Serves: 4


Hull the strawberries. Peel the bananas and cut them into rough chunks. Put the fruit in a food processor or blender, crumble in the coconut and add the water. Process until smooth, scraping down the sides of the goblet as necessary. Add the skimmed milk, lemon juice and ice cubes, crushing the ice first unless you have a heavy-duty processor. Process until smooth and thick. Pour into tall glasses and top each with a slice or two of strawberry. Serve immediately.

Variation:- To give this smoothie a tropical flavour, use papaya, mango or pineapple in place of the strawberries and add lime juice rather than lemon. To make a dairy-free version, replace the skimmed milk with soya milk.
