Metheglin 3


16 lb. honey
1 blade of mace
4 cloves
Mead yeast
3 gallons water
oz. cinnamon
oz. root ginger


Gently simmer the water and spices together for one hour, then strain while still warm on to the honey. Stir the mixture vigorously and when cool add the yeast. Continue as directed for Sweet, Still Mead 1.
