Chinese Shrimp Kebabs

Ingredients

4 KEBABS

1½ pounds medium raw shrimp, peeled and deveined
¼ cup soy sauce
2 tablespoons chopped garlic
2 tablespoons chopped fresh ginger
2 tablespoons thinly sliced green onion
2 tablespoons Splenda or other artificial sweetener
1 teaspoon Asian sesame oil
¼ teaspoon dried red pepper flakes


Method

In a medium resealable plastic bag, combine all the ingredients except the shrimp and blend well to make the marinade. Add the shrimp and turn to coat all over. Seal the bag and refrigerate for 4 to 5 hours, turning the shrimp occasionally.


Preheat the broiler. Remove the shrimp from the marinade and thread them onto 8 inch wooden skewers that have soaked in water for at least 30 minutes. Set a rack over a broiler-proof pan and place the shrimp on the rack. Place the pan under the broiler, 3 inches from the heat source, and broil the shrimp for 3 to 4 minutes on each side or un­til they are pink.

VARIATION:- Place the shrimp on a baking sheet that has been lightly coated with a nonstick vegetable spray and bake in a preheated oven at 400°F for 10 to 12 minutes.
