Tomato, Feta And Shallot Salad

Ingredients

4 medium (500g) tomatoes
500g feta cheese
⅓ cup (80ml) olive oil
cup (60ml) lemon juice
3 green shallots, finely chopped
2 tablespoons chopped fresh mint

TOPPING

2 tablespoons roughly chopped walnuts, toasted
3 teaspoons sesame seeds, toasted
teaspoon cumin seeds
teaspoon coriander seeds

Method

1. Cut tomatoes into wedges, remove seeds and cores; chop tomatoes finely. Cut cheese into 1 cm pieces.


2. Whisk oil and juice in small bowl until combined; add shallots and mint; mix well.


3. Topping: Finely chop all ingredients.


4. Combine half mint mixture with tomatoes in bowl; gently stir to combine. Combine remaining mint mixture with cheese in separate bowl; gently stir to combine. Refrigerate tomato mixture and cheese mixture, covered, at least 1 hour. Place cheese mixture on serving plate, sprinkle with half the topping, top with tomato mixture, then remaining topping.

Tomato mixture, cheese mixture and topping can be made a day ahead.
Storage: Covered, separately, in refrigerator.
Freeze: Not suitable.
