Orange, Date And Almond Salad

4 large (1.2kg) oranges
⅓ cup (50g) dried apricots, halved
2 tablespoons blanched almonds, toasted
2 tablespoons chopped fresh mint


1 cup (250ml) water
2 star anise
1 cinnamon stick
6 cloves
2 tablespoons honey
cup (95g) sliced dried figs
cup (85g) seedless dates, halved


Serves: 4


1. Peel oranges thickly, remove any white pith, cut between membranes into segments. Combine orange segments, apricots, almonds and mint in bowl, add syrup mixture; mix well.

2. Syrup Mixture: Combine water, star anise, cinnamon, cloves and honey in small pan, simmer, uncovered, about 10 minutes or until thickened and slightly syrupy. Add figs and dates; cool. Discard star anise, cinnamon and cloves.

Recipe can be made a day ahead.
Storage: Covered, in refrigerator.
